Manuka Smoked Salmon

After curing in a wet brine of Sea salt and pure water, the salmon fillets are smoked at a low temperature in natural Manuka wood smoke. The salmon is then cut into thin translucent slices, which are ideal for delicate finger foods and canapés, where taste, texture and visual impact are important.
