Peppered Mackerel Salad with Asian Dressing
200 g packet Seasmoke Peppered Mackerel, flaked
130 g packet mesclun salad mix
1 red pepper, sliced
1 Lebanese cucumber, cut into chunks
1 avocado, sliced
2 spring onions, chopped
¼ cup oil
2 tablespoons soy sauce
2 tablespoons sweet chilli sauce
2 tablespoons rice vinegar
1 teaspoon brown sugar
1 teaspoon sesame oil
1 clove garlic, crushed
To prepare the dressing, combine all ingredients. Set aside.
Place the mesclun on a serving platter. Top with the flaked peppered mackerel, red pepper, cucumber, avocado and spring onions.
Drizzle with the dressing and serve immediately.
